If you hear the music and watch the knee and leg action they're all on time. You have to understand they are competing with a piece of choreography they've practiced hours to, not just something they made up and can change to fit the music whenever they like. The idea is to hit the steady beat in the background nothing else.

Effortlessly off beat. These couples are muscially DEAF. To a musician this is comic parody.
They are all dancing 'straight time' to a highly syncopated piece of music .
There's fantasic highly syncopated riff at 0.44 they all just dance though it like it wasn't there. You have to deaf to that.
