Can you correct what I'm doing:
I fry minced garlic and chopped green onions for a while before I add in the kimchi. After, when it smells like fried kimchi already, I add in some kimchi juice to keep the kimchi moisturized, and then water. I then add gojjujjang to in proportion with the water I added, sprinkle some salt and pepper, and then add in diced pork belly and tofu. I let it boil, and voilà -- kimchi jjigae.
It doesn't taste exactly like the ones in Korea, but hey, it's somethin.

My husband doesnt like fishy foods, what would be a subsititute sauce for the oyster sauce in the Kimchi?

Hi there~
Thank you for watching Korean cuisine.~
You don't need to add any meat for the Kimchi Jigae and It would taste good as well without the using any meat.
For the making Kimchi, please use just salt and instead of using the fish sauce.
Have a delicious day:)
