Excellent video, very clear and concise, great demonstration. You're right, I consider myself a pretty good cook and making hollandaise is an imposing task, your video really gave me confidence to try it again. The first recipe I tried used white wine vinegar, lemon juice and cayenne and it was too much tart and too much hot. I'm going to try your traditional one, it's always wise to start with the basics, then work up from there by trying variations. Thanks again! Pete

great sauce and it has a nice consistency. i just want to ask if is it ok to add white wine. because i'll be having my hands on exam in school. and it says on my school recipe that i have to add white wine.

It is not traditional to add white wine, but you certainly may do so. The approach is a modernization to a classic formula and you need to be sure to 1) reduce the white wine before adding it to the sauce, and 2) be sure to offset the white wine as a replacement for an equal amount of water called for in the recipe.
