蒜茸蒸蝦 阿基師

阿基師教你做

食材:
草蝦300g(洗淨去腸泥)、板條150g、蒜泥75g、蔥花50g、韭菜末

調味料:
香油、油膏、烏醋、味醂

做法
1.先將板條切條,再把蝦子切蝴蝶刀。 (從蝦的頭部開始剖)

2.醬汁:蒜泥40g + 油膏4大匙 + 少許冷水 + 少許烏醋 + 少許味醂 + 少許香油。

3.起蒸鍋,取成品盤,將板條鋪底(蒸3分鐘),上面再鋪蝦子(劈腿放蝦,蒸50秒),最後淋上醬汁,入鍋蒸80秒。

4.起鍋加熱香油+沙拉油(兩者各半),將步驟3取出後,灑上蔥花及韭菜末,再熗上香油即完成。

小叮嚀:
1.器皿的(厚薄)的導熱速度, 影響蝦的嫩度。

  • 剛剛試做了,不過家裡沒板條和韭菜,所以沒放。但是成品出來還是­超極好吃,謝謝阿基師。(^O^)
