They used an Elvis impersonator on stage, The audience saw him, as he lip synced Elvis' part. For the TV show they used a process called Rotoscoping. It' s been used for a long time. Basically, they cut Elvis out of the original film and pasted him into the show over top of the impersonator. It's not a true hologram, but a nice effect all the same.

Actually no, I believe you are living in the past. That was in fact a hologram. The technology exists, recently they did it with Tupac. The technology is called Musion Eyeliner system. Actually it isn't a hologram, it's a 2D image that gives the effect of a 3D image.
