1 can Ro-Tel Tomatoes (lime and cilantro) drained
1 can Green Giant Shoepeg Corn (it does make a difference)
1 can Black Eyed Peas (drain and rinse)

Drain of the juice and combine in a big mixing bowl. Then add:

1/2 red pepper (chopped)
4 scallions, chopped
1/4 cup fresh cilantro, chopped
1 dash of caynenne pepper
4 oz. Zesty Italian Dressing (this is important. You can use the light but not fat free)

It tastes best if you make it the night before, cover and put in frige over night.

  • i am alergic to green,red,yellow peppers can i like not add the pepper and it sill be good?

  • It should be fine. There is not alot of pepper in it and really it just gives it a little more color.

  • a few people from my work have brought this: i have seen it made with white hominy. Somone gave me the recipe and it called for garlic powder, onion salt, and a purple onion. Yours looks sooo fresh. The kind I have always tasted (which is only 2 different kinds) was soupy but it was still really really good! By the way, you are a natural in front of the camera and I think I definitely need a food chopper. When I cut onions I can't even keep my eyes open from the stinging and tears!

  • I was thinking the same thing actually. Maybe not for this recipe, but it seems like everything she makes is just a combination of processed and pre-packaged food.

  • Rotel Tomatos, esppecially diced Rotel w/ green chiles are a very popular brand in Texas. Nothingn ele even comares. They have a very particular flavor and texture. But if you're not from texas you wouldn't understand that.
