In CS3, palettes were not overlapping maximised documents, which is something I really like. I just bought CS4, and it doesn't do that anymore -- it reverted to the old same behaviour I grew to hate with palettes overlapping my documents. Is there any way to change that screen view back to the way it was in CS3?

Now THAT is not true. Photoshop has grown alot since version 2 and it only has more room to grow.

You can turn the backdrop on and off. They just made it an option because thousands of artists which hated it had whined and bitched and complained for years about it.

The only thing I've read is that the file windows can be stacked, but that they still float on the one window interface. So until we get more definitive screenshots or an actual beta, it doesn't look good. (to me anyways)
So it can rotate nondestructively. Corel Painter is sooooo dead...
