I can find out what it was. I saw that it was a descending Rustler.

It was most likely a glitched Rustler flying past, as you know, planes crash quite frequently around San Andreas in random spots. This could be a simple glitch in where it has just disappeared instead of actually crashing.

That's what you call an easter egg. Like the heart inside of the Statue of Happiness on GTA IV, or like UFOs in Call of Duty - it just makes things interesting. Adds some mystery and fun.
