1) Coffee in the top chamber at the beginning of the brew, there is zero chance to ensure proper temperature of water before the coffee and water meet.
2) The temperature is not taken once during the brew (the whole point of the siphon is accurate and stable brew temp if you know what the temp is)
3) The water actually hits boiling (hence the bubbling in the top chamber), ew.

I like a sweat sock and a funnel just stretch the sock around the funnel and pour it works great
