In this video, Betty demonstrates how to make her Mexican Crustless Quiche to go along with her Mexican brunch. This quiche has green chiles for a little heat, and it is superb with some Chocolate Coffee!

Ingredients:

5 eggs
1/2 cup flour
2 tablespoons butter or margarine, melted and cooled
12 oz. cottage cheese
4 oz. can green chiles, undrained
2 cups (8 oz.) shredded Monterey Jack cheese
cooking oil spray
9 to 10-inch pie plate or 10-inch quiche dish

In a large mixing bowl, beat together 5 eggs, 1/4 cup flour, and 2 tablespoons melted butter or margarine, until thoroughly combined. Stir in 12 oz. cottage cheese, a 4 oz. can of green chiles, undrained, and 2 cups of Monterey Jack cheese. Pour into pie plate or quiche dish that has been sprayed with cooking oil. Bake at 400 degrees for 10 minutes. Reduce the heat to 350 degrees, and cook about 25 minutes longer, until a knife inserted in the center comes out clean. Let stand about 5 minutes, and then cut into pie-shaped wedges. Serve while hot! Muy Bueno!!!

  • @frostyone0164 The Monterey Jack cheese is a Mexican-style cheese. It is a white cheese, and it is much milder than cheddar.

  • @bettyskitchen What a shame Betty! Mr. Krogers loss! I even wrote a letter to the company on your behalf, giving them a heads-up on your vids with all of the Kroger products...which are of great promotional value for them. Guess they are so big that they can't see the flour for the freeze huh? Anyway, your vids are fab & you have a ton of followers that are learning how to make fab dishes. This keeps the world cooking & thats a good thing. All the best to you and yours Betty !

  • @frostyone0164 Hi Den a half and half mixture of Mozarella & mild cheddar would probably be as close to Monteray Jack cheese as you could get. Hope that helps? All the best !

  • @frostyone0164 Just below the video is a view count. Click on the sargents stripes just to the left of it and you will see all of the recipe.
