In this quick 4 minute video, Sean & Cathy cook up some delicious potato cakes. Of course ,since it has "potatoes" in it, Cathy thinks it's Irish food! Actually it is a Lenten dish. For this recipe you'll need some thawed leftover hash brown type potatoes and some mash potatoes to help bind it all together. Then add a dab of chipotle salsa, not chipotle and adobo and all that other stuff just the salsa. Next you'll need to add green onions, cheese, green bell peppers (you could use red as well) and some spinach to add nutrients. There isn't a need to add any salt since the cheese is full of salt already. Now for the binding agent and the gooey part - add two raw eggs. You're not getting off easy; you have to mix this up with your hands! Be sure and really mix it up good so your cakes will stick together. In a skillet heat up some butter but be careful not to let your butter get too hot because if you do it won't work. Once you have worked the mixture it's time to make the cakes. Take a meatball-sized portion and pat it into a ball and add to your skillet of butter. The trick is to let the cakes cook. Try not to mess with them until they are ready to turn. (Side note: Something you can expect is that you might have a little difficulty getting your cakes out of the pan).
If you want to dress this dish up for a fancy setting, Sean always has tips to share to make your food look like it came from a restaurant. V8 (which is a Campbell's company) makes great soups in these 18.3 oz. cartons that you can add to your plate, heat up and use as a sauce. This one is Butternut Squash soup. Just add your cooked potato cakes right on top of this soup/sauce, sprinkle a few of the remaining bell peppers or whatever you might have leftover, and serve!
