Chocolate Mint Cookies 30 minutes
Chewy, chocolaty and minty. . . . Mmm! Need I say more?
Ingredients
1 (8-ounce) container fat-free dessert whipped topping,
1 (18.25-ounce) dark chocolate cake mix
1 teaspoon mint extract
3 egg whites (or 6 tablespoons Egg Beaters)
2 tablespoons confectioners' sugar
Instructions
Place the oven rack on the middle shelf in the the oven. Preheat the oven to 350 degrees.
In a large mixing bowl, stir together the whipped topping, cake mix, mint extract, and egg whites until well blended. The dough will become very stiff.
Spray three cookie sheets with cooking spray.
Drop the dough by rounded tablespoons onto the prepared cookie sheets.
Evenly sift the confectioners' sugar over the tops of the cookie dough.
Bake two cookie sheets at a time for 7 to 8 minutes.
Bake the remaining cookie sheet for 7 to 8 minutes
