Approximate capacity rating on hamburger patties: 174 lbs./hr. based on 1/4 inch thick patties, 1/4 lbs. each, going from a starting temperature of 40°F to a core temperature of 0°F, where plate temperature is -45°F and approximately 2 tons of refrigeration are used. Contact plate freezers offer an alternative to freezing, as products come into direct contact with plates that freeze products to a core hardness of 0°F at an average of one inch per hour. Not only is this method less expensive than air blast or cryogenic alternatives, but other benefits include: preserved product texture, uniformity and nutrient retention as smaller ice crystals are formed and damage to cells is virtually non-existent.
