The only "Christ" part of Christmas is Christ himself. Everything else (Mistletoe, greenery, present giving, the yule log etc) were 'borrowed' from Pagan winter solstice celebrations. December was chosen to incorporate all those traditions in order to convert Pagans more easily. So many ignorant Christians are completely unaware of this. I say happy holidays because in all honesty, it is presumptuous and arrogant to assume everyone is a Christian. It covers all bases, not just Christmas.

@Xz3hrX I wouldn't care if someone says Happy Eid Al-Fir, Quanza, Hanukkah etc. everyone is free to express their beliefs as long as I am allowed to express mine, I actually preferred it when my atheist friends said "Happy winter break" instead of pretending to actually care about holidays that they don't believe in when they go around saying "Happy Holidays" to everyone.
