There are some stops available via Technique Text commands, not in the mixer. However, it is only a relatively small Skinner Organ, not a real massive church organ like it should be. At least GPO included that.
@thomasbryla True, but remember that a performer can also adjust how loud they're playing to fit the right balance. It's kinda of the same thing as adjusting the volume in Sibelius's mixer.
But obviously it would be best if the default balance is as good as possible.
@LOTRzagorath well the point is: you shouldn't tweak it, because then you'll be adjusting to your liking. The great thing would be: they have it calculated how instruments play together dynamically. You shouldn't have to push the piccolo up when it's playing solo in the bottom octave against an orchestral tutti to hear it. Sibelius should play it back as it would sound, so you could put the solo up in the picc's highest octave to everybodys annoyance.
Great videos, Thomas! One thing I'ld like to know about in Sib7 is: How well does it deal with balance? Say flute piano versus 4 trumpets piano? Is it what-you-hear-is-what-you-get?
Wow. That organ is dreadful. Were they even trying with that?

Haven't tried at all, but am I right to assume the woodwinds are ok, brass not so good, and strings worse still? (yes I am a string player...)

A real shame about the organ, but I really loved the way the harp has a sort of twang in the really loud sounds.
Like what you were saying about the timpani in percussion.
