  • You only need to let it rest about 10-15 minutes. It allows the gluten in the dough to relax so it's easier to stretch and fold over all that butter.

  • Zhaquiri, you should be able to use the puff pastry for anything you want! Keep in mind, it really does PUFF up. You can fill them and freeze them for later use. If you're going to do a turn-over, make sure you cook your filling first, or your apples may still be too firm.

  • Dorian2XX, sticks of butter come in 1/2 cups. That converts to about 113.4 grams.

  • Reddsmorris1, the way I look at it, if you're not a little zingy and silly in the kitchen, the food just doesn't have the love! I'm glad you liked the video.

  • jaqsro, if you can't find pastry flour, just do 2/3 all purpose flour and 1/3 part cake flour. If you can't find cake flour, just use a good quality all purpose flour. Let me know how it works out for you! - Brandi

  • @asmahjuri I would make sure and use it the same day. Baking is all chemistry and you don't want the chemistry to change too much before you want to use it. I would put it under a damp tea towel in the fridge until you're ready to use it. - Brandi

  • ermm after you have done with the folding the second time you have put it in the fridge can you leave it again in the fridge to use it afterward~?? or you have to use it straight away after you have fold it the last time??

  • @Reddsmorris1 I think you could do the dough base WITHOUT the butter and keep it for a day or so, but I wouldn't push it. This dough is kind of picky and should be made and used sooner rather than later. But, if you make the dough, keep it wrapped in plastic wrap in the fridge and use it within three days.
