This is not the traditional belgian beer beef... but close enough :)
Get some dark beer in there man, Duvel is just not suited for stew

@rubenvolckaert I learned the recipe while in Belgium. All I could get this far away was Duvel (although a dark Canadian beer works). The chef I worked with said 'go for it', it will be great (and it was/ is). I try to be authentic as possible in most recipes as some folks would make just stew and pour beer in it and then call it Belgium Beef stew. Much like many do with adding red wine and then calling it Boeuf Bourguignon (Julia Child messed that one up for everyone). thank you and cheers! KtC

Is bacon fat necessary in this recipe? Can I use butter or another fat to substitute for it?
Also, what are you referring to when you say 'stewing beef'?

@DEC0042 Stewing beef is from the chuck however, round or even sirloin can be used. Use a bit of olive oil instead of the bacon. The idea is to seer the beef a bit first. Bacon although not for everyone works well as it also infuses the beef with some nice flavours. You can refer to my "Cuts of Beef' vid. for the various cuts. cheers, KtC
