I've never seen an immersion blender used as an electric mixer -- you need to get the kind with the metal whisk things that spin around real fast. That'd do it!
Usually when you cream, that means beating in the sugar with the butter first, then adding the eggs and cream (mix) together until there is a homogeneous texture. But you did not have any sugar, so your mini-mixer trick worked well. I am not a health person and don't have a clue what those ingredients were.
