Recipe: Lumpiang Sariwa - (Vegetable Roll)
Wrappers
1 c flour
1 1/3 c rice flour
½ tsp sea salt
2 large eggs, beaten
1/2 c coconut milk
cold water, 1/4c or more
Sift flours and salt. Whisk eggs, water and coconut milk then add to flour. Add extra water to the consistency of heavy cream. Pour to a skillet, cook until edges curl.
Filling:
3 Tbs coconut oil 1/2 meyer lemon
10 cloves garlic, minced tamari or soy sauce
2 green onion, julienne ¼ cabbage, shredded
2 carrots, julienne 1/2 jicama, julienne
10 sliced shiitake 1 head lettuce
black pepper and sea salt
Mix the tamari, lemon, salt, and pepper. In wok, warm the oil. Saute the vegetables just until tender, add tamari mixture and season to taste.
Sauce:
1 Tbs oil
4 garlic cloves, minced
1 Tbs tamari
2 Tbs muscovado sugar
1c peanut butter
1 limes, juiced and ½-1/2 c water
¼ c coconut milk
Simmer all on low.
To serve, place a lettuce leaf on a wrapper, fill with vegetable mix, fold bottom, roll and top with sauce, chopped cilantro, and crushed peanuts.
