@AngelOfSin666 It's vegetable tanned cow hide, likely from the side of a cow. She buys from Wickett and Craig (though you can also get leather at Tandy Leather). The size she uses is 8oz (leather is measured in ounces), but 4oz is great too and can also be tooled on.
For people asking what kind of leather, and how thick, etc. -- She is using vegetable-tanned tooling leather (also called carving leather). You can get it from Wickett and Craig, or Tandy Leather (at least in America). She is using 8-oz. leather for this (which she says is about 1/4 inch thick), but you can use thinner leather as well. The important thing is to use vegetable-tanned cow leather. Leather that is tanned by other means will not work with the method she's teaching here.
