Lincoln indeed taught himself, and yet he also kept manuscripts and evidence of his writings. In addition, people actually saw him speak and wrote. As for evidence of the late 1500's and early 1600's of anyone writing, it's quite hard to come by, actually, so rather one can say the evidence is circumstantial.

Hamlet is a rewrite of Denmark folklore. Romeo & Juliet was an older Italian tale.
Why is it so hard to believe that Will wrote his works with a plain education? Look at Lincoln he taught himself. As for the De vere theory, I'm sure that he might have heard some banter about his life somewhere and appropriated it. Writers tend to filch gossip & news, and actors love to brag. Marlowe was a good murderer so I'm sure he put in his 2 cents worth.
