  • Those are technical decisions to be left up to the cook, depending on personal preference. I have seen "real" Pad Thai with the thinner noodles, and even if it's not as common, it's hardly a "major error". As for things going in too fast and early, remember that most of the cooking time is edited out for television.

    Also, I know for a fact that, in real life, Alton Brown uses a wooden wok spatula when he does large stir fries.

  • At 4:11 he says the rest of the tofu can continue marinating for another few MINUTES. Oh? Is is going to take them out the second the camera angle changes? I think he meant to say "hours" instead of minutes.

  • @Ostromite : I agree. Personally, I prefer flat noodles, the ones that look sort of like thin transparent egg noodles. I think they give a very nice texture to the dish, in combination with crushed peanuts. Also, while I'd use lime juice to top the dish, given a choice I'd rather garnish with lime leaves, or even lime zest, than with whole lime wedges, just because I think lime wedges take up too much space on the plate. A small bowl of lime wedges on the side would be nice, though.

  • I love AB, but in my opinion, this dish looked too "eggy", undercooked, undersauced, and the tofu should've been cut into more manageable sized pieces.

  • Yeah there is this place on the north side called Thai Palace. There is one dude we call amazing Nick, he does the cooking the serving the cashing out (and I mean cash he has no credit machine) everything by himself. It is the most fresh and flavorful food and I always order chicken pad thai. What my man AB just made looks nothing like it.... and i'm an AB fan.

  • Definitely must use the standard metal spatula (NO TONGS!) And I'm quite sure the eggs go i after the noodles. He's using the wrong type and yes this is a MAJOR ERROR I'm afraid! In fact it's sacrilegious to be using the wrong type of noodles. We asians are very particular about our noodles!

  • this man is correct i'm afraid. been to thailand many times and im sad to say maybe alton should have taken this trip!

    the attention paid to the tofu was weird also, only a few places do i see this product getting used. fresh peanuts to roast and salt yourself, my god the man has obviously never went to thailand... pad thai on a bbq, i dont get it, neither would bbq ppl. you need a good hot gas heat.

    good eats is awesome, this aint one though in my opinon. :(
