The only ones that I know of that absolutely can not be obtained once you leave the area are the two that are found in the Welcome to Rapture level and the three that are found in Rapture Control with Andrew Ryan.
With the Welcome to Rapture audio diaries you have to get them before jumping into the pool of water where Andrew Ryan sets off the alarm and the ones in the Rapture Control have to be found before you meet Andrew Ryan.

It's possible that you can just get them all without listening to them, just go through and get all of them. If you get all of them and don't get the achievement/ trophy then listen to all of them.
I personally listened to all of them just because I wanted to know what had happened more in depth.
