Another thing I would say is that you want to get organic or eggs right from the farmer - cage free. Many commercial/factory eggs can come from stressed chickens, more junk in their feed to artificially boost production & lower quality.
I buy farmer direct, cage free & you can see the difference in the shade of yellow yolk and the strength of the shell. Weak shells, light yolks are what I avoid.
If you have a farmer's market get them there and spend the extra few cents an egg.

That's pretty cool but you are WAY overcooking the egg. The yolk must be all chalky. I place the eggs in cold water, turn heat on high and then let them go until the water has been boiling for 5 minutes. Immediately place in a ice water bath to cool quickly. They don't peel as easy as yours but fairly easy and the yolk is perfect. Overcooking damages the protein in the egg.

@samherb1 - I agree - If I were to boil them for 15 minutes the eggs would be damaged. It was a quick video and I didn't explain it as well as I could have. I put the eggs in cool water and let them boil. The whole process takes about 15 min. Then I let them sit for an hour.

This works best when you use eggs that are not fresh. Eggs that are about 2 weeks fresh are better & don't adhere to the shell as much as day-old eggs. Just an observation and a comment from the farmer I buy the eggs from.
