【泰式鳳梨炒飯】
材料 / 鳳梨 1顆、蛋 2顆、草蝦 12隻、透抽 100g、洋蔥末 1/2顆、咖哩粉 2匙、白飯 3碗、蔥花 1支、肉鬆 適量、雞胸肉 150g
調味料 / 魚露 1.5匙、白砂糖 2匙、醬油 2.5大匙、胡椒粉 適量、酒 1大匙
做法:
1、鳳梨取肉切丁,雞肉加入魚露、胡椒粉、醬油、蒜末、糖、米酒,少許醃一下。
2、起油鍋放入打散的蛋汁,炒至8分熟後取出;再放入洋蔥爆香,加入雞肉炒至半熟變色,再加海鮮丁炒熟後盛出。
3、再加少許油,炒香咖哩粉,放入白飯、鳳梨、醬油、魚露、糖拌炒均勻。
4、再加入海鮮,撒上蔥花拌勻,盛入鳳梨殼裡,放上肉鬆即可。
5、檸檬汁加魚露以3:1混合,加入辣椒片,要吃的時候搭配食用。
