size of this or smaller halibut is good for sushi or sashimi.
if you fillet live halibut, meat texture is little chewy so after next day is good to eat for sushi or sashimi.
it gets tender cus of meat of the muscle gets loosen

i only use deba when i cut head of the fish which i hav to cut bone through.
