The sugar molecules are the *same*: fructose (55-90% in agave, 55% in HFCS) and glucose (the rest). Hybridization has absolutely no effect on the composition of the sugars. NONE. Fructose results in lower GI but a host of other health problems attributed to HFCS. It's worse in agave because the fructose level is higher.

I use vanilla stevia to sweeten my chia fresca. If you use too much you'll get a bitter after-taste. I put 4 heaping tbs. into a large Blendtec blender carafe. I then add 4 cups of filtered water. 10 drops of liquid vanilla stevia, a few sprigs of fresh mint leaves, 1 peeled and seeded organic lemon. I then low speed blend the mixture for a couple of minutes and let it sit for 15 minutes or longer for the chia to turn into a gel. I then high speed blend until smooth. Tastes great

@mountainmay honey is boiled to kill all the germs so it doesn't really matter and the honey combs are almost identical to the natural bee made ones.

@nukeguy04 Because honey is BEE BARF and it is not natural for humans to eat it, nor is it environmentally friendly. Bees ingest and regurgitate nectar many times until it is partially digested to create "honey". Humans steal it and keep them enslaved in unnatural settings (those big white boxes) to produce more. Extremely disruptive to their natural lives and quite a negative impact on nature.

i know somwhere we could get this perfect food at $7 per 112 grams, is it worth the price?
I don't know id Agave is good for you or not it seems like a waste to use it as a sweetener, when its true purpose in life is to become alcohol. Besides honey is cheaper and better for the Earth. Why put all that carbon into the air shipping it up to me when I can walk down to my friends farm and get organic honey from him.

@nukeguy04 word! It can be controversial can't it! Seems to be a lot of agave controversy going around. Feel free to use whatever sweetener you like!

Agave is not raw (it's cooked) and it's indistinguishable from high-fructose corn syrup from a nutritional perspective (basically a starch feedstock treated with enzymes and/or heat to yield fructose and glucose). I really wish raw foodists would understand chemistry a little more instead of glorifying this garbage substance.

You can get truly raw agave. The sugar molecule is different from hybridized corn and it is lower glycemic. Can you give a source for your information please?
