Brine = saltwater. What ratio? The pan, the oil, butter I'm okay with, but your mix. No egg? No buttermilk? Admittedly you don't need emulsifiers to stick the flour to the skin *as much* but they help, and add to the flavor.

Oven cookie sheet cooking's healthier and easier, but please try to stick to the recipe. Egg/milk is mix only, not part of cooking.

The salt water that we put the chicken in at first?? Is is jut plain water with a teaspoon of salt? Or is it a special salt water??

I made this for supper this evening...and it was a hit at the dinner table. It was so much easier cooking it in the oven than on the stove. I was really proud of myself. Just thought I'd let you know...thanks for the recipe :-P
