they are writing down there each move in chess notation. At formal chess events they do this to assure that there are no illegal moves played, and if a move is ever called into question then they have a record. At the end of the game each player signs his move card, kinda like golf.

Another great video that show how professionally run the Canadian Open really is...Looking forward to more video of Canadian Open!! It would be great if Edmonton host Canadian Open 2010.
