FOODS WITH GLUTEN TO AVOID are listed below. Notice, they are ALL grains. They are also carbohydrates.

GRAINS SAFE FOR CELIACS, free of gluten are listed below:
Rice
Millet
Quinoa
Amaranth
Corn (Gives some celiacs trouble. I don't know if it's due to cross contamination or what. I suspect it gives me a hard time.)
Buckwheat (Is not a wheat! Totally safe for celiacs.)
Oats (Free of gluten, but can be cross contaminated due to being processed in factories with wheat and grown side by side in fields. Bob's Red Mill is a safe, gluten free brand.)
ALL THESE GRAINS CAN BE GROUND INTO A FLOUR to make gravies, sauces, deserts, breads, pancakes, waffles and more! The celiac's diet needn't be boring. In fact, those on the SAD diet, Standard American Diet, eat far fewer grains and are the ones with the truly boring, lame diet, devoid of vital nutrients and minerals! They are the ones missing out, trust me. They suffer the worst health as well.
TO MAKE THESE GRAINS EVEN MORE NUTRITIOUS, SOAK THEM FIRST. Here's why. Most grains, and legumes (beans) and lentils contain a phytic acid that prevents full absorption of nutrients and can be hard on the system. Soaking them first, deactivates phytic acid and unlocks vital nutrients, especially B vitamins. Add some vinegar, lemon or lime juice to help deactivate the phytic acid found in these grains and legumes.
I like to soak over night...at least for 12 hours, but 24 may be better. You can stain and rinse the water several times if you like while soaking takes place, but you don't have too. Just be sure to stain and rinse right before you cook.
SATURATED FATS MAKE NUTRIENTS MORE AVAILABLE TO YOU. Butter, lard and coconut oil aid immensely in the simulation and absorption of nutrients. The wisdom of Ayurvedic Medicine has known this for thousands of years. Today, modern science now confirms this as fact. Take advantage of saturated fats to maintain good health.
I highly recommend a documentary called THE OILING OF AMERICA that exposes the truth and scandal behind the suppression of this information. Modern Science has shown the harm from common veggie oils, but this information as been greatly suppressed by mega companies who want to sell you these dangerous veggie oils. We've all been sold snake oil.
Despite the use of animal fats going down in America, cholesterol and heart disease have gone up. Do the math. Fat is not the cause of weight gain either. If you'd like to argue this, think of the Atkins diet where you can eat all the fat you want, but must cut out carbs. End of story.
Saturated fats actually prevent hardening of the arteries and work as a lubricator. It's true. Dr. Weston A. Price discovered in his world travels searching for perfect health that Eskimos on their natural, indigenous diet of nearly 100% animal and fat based had remarkable health and resistance to all disease. Raw seal meat, dipped in seal fat is what they eat. Just a little something for you to chew on.... challenge your old beliefs. We've all been subjected to propaganda. Think for yourself, do the research. It is out there.
