Maybe you could use one or two gel packs in place of the ice? If you have an expensive kitchen mixer that can do really slow speeds (for making doughs and similar thick stuff), you can buy the gel bowls for doing ice cream.
10/10 for effort - hand making ice cream takes lots of it. I have an ice cream machine, which is just a paddle that turns slowly in a bucket (the walls of which are filled with that cold pack goo). I have to leave it in the freezer overnight, cool the mix in the fridge and it still takes ~20mins to start getting thick. Then it goes in the freezer to firm to 'solid'. So you need something that can soak up lots and lots of heat - the ice (water) isn't as good as the gel pack goo.
Hmmm...did you try layering the salt with the ice? Also I hear rock salt is better to use for this kind of thing.
