Hi Everyone,
This is a video resonse to the "Protein Muffin" recipe that Trulyjess had posted earlier this week.

I did tweak the recipe a bit just for my own personal tastes, so here so here is the recipe that I used:

¼ cup egg whites
¼ cup no sugar added Applesauce
*3 oz banana(broken into chunk and then mashed)
2 tablespoon's All Purpose Flour
½ teaspoon baking powder
1 tablespoon Splenda (or you can use 2 packets)
1.5 teaspoon's semi sweet mini chocolate chips
1 Tablespoon Skippy Natural Peanut Butter

Place all the ingriedents, except for chocolate chips and peanut butter, into a small bowl and mix well. Add in the chocolate chips and gently fold in to the mixture.

Spray a small microwaveable bowl with nonstick cooking spray. Place your mixture into this bowl, and cook in the microwave 3 to 5 minutes or until a knife inserted into the center comes out clean.

Remove from the microwave and place the peanut butter on top, and then place back in the microwave for 20 seconds.

Using the back of your spoon spread the peanut butter over the top and enjoy!

Update: I will be making this again, but next time intead of the applesauce and banana I'm going to try it with the pure pumpkin to save calories.
