    Technically, isn't this called "honing" the knife, rather than "sharpening"?

    My understanding was that "sharpening" creates microscopic teeth in the edge of the blade, which gradually get bent over, leaving the knife dull.

    Honing straightens the teeth out so the edge is keen again. But, eventually, the teeth wear down and can't be honed, so you have to re-sharpen.

    I have my knives professionally sharpened, but I hone them myself. With this approach, it's months between sharpening.

    Yeah, fair enough, the issue is that the technique he's showing is really a sort of touch-up, and will only restore a sharp edge for awhile. Eventually, the knife will be worn, and will need to be sharpened by making a new edge. By the time most people decide they need to "sharpen" their knives, this won't really work.

    I learned to hone knives when I has cook in the Army and your way is not correct but still do the job, angle should be 20 degrees.

    No you don't want it about 10 degrees. That will dull the edge if your angle is more than 10 degrees and it will just scratch up your knife and not sharpen if it is less.
