The constitution was adopted in 1787. Charles Darwin was born in 1809 and published The Origin of Species in 1859. The fact of evolution was simply unknown at the time of establishing the constitution, scientific knowledge wasn't there yet. And I don't see why it would have been mentioned in the constitution even if it would have been known.
Also most of the founding fathers were NOT religious, but deists.
