How much fresh ginger do i need? and is there any prep for the ginger? just break some off and chopp???

@sprawlmessiah Do you understand that boullion is a French term ? it means stock cubes /powder The French make fresh stock which is usually made with bones, carrot , onion and celery, they also use bouguet garni ) parsley stalks, 6 black pepper corns, galic , bay leaf, pinch of thyme wrapped in lak leaves and tied with string ) but this is added to the stew soup etc along with liquid fro the stock pot I'm a vegetarian so I just leave out the bones Thank you candibal for the recipe ( economical )

I am so glad I found this video. I had a whole bag of baby carrots that were past the due date and wanted to do something with them quick. I am now cooking this. I improvised a some and added some squash because I did not feel like shopping again. Plus, squash needed to be cooked too. This video inspired me to do something new, and now I am.

Is it thick? I hate it when I try make soup and it's watery.

@ozboybrian This soup ended up being very thick but if you ever run into that issue where your soup is too watery, turn down the heat to a low temperature and let the soup simmer for an extra long time uncovered. The water will leave the soup as steam and in it's absence you will have a nice thick soup. This is particularly useful if you accidentally put too much water in the soup to begin with.

if i can't score a vegetable buillion, what can i use as an alternative?

@sprawlmessiah Instead of the buillion you could seprately mix some oil with some cider or balsamic vinagar and a ton of fresh herbs and spices like basil, oregano, salt, pepper, tumeric... pretty much anything you can find and might have on hand. Mix that all up into a paste and then add it to the soup until you like the flavour.

Hey just a quick question, how long do we cook the carrots for before I puree it? Thanks :)

@DevilDman You cook them until you can easily poke them through with a fork. They should be soft. Timing on this can vary, you just want the carrot chunks to be cooked all the way through. This will make pureeing the pot very quick and easy.
