1. Fork + Nonstick is a bad idea. It can scratch. A spatula is much better.
2. Those look quite over done. A good rule of thumb is if they're perfect in the pan, they'll be over done in the plate due to carryover temperature.
3. I recommend beating the eggs outside of the pan, as it can keep you from overcooking.
4. You can add a bit of cream or half and half to the eggs as it'll also lighten the texture, while making them rich and creamy.
5. This isn't an omelette. This is a scramble.

Thank you for the tips, I thought of that my self since the fork is metal and it does scratch the PAN. Good point to about beating them ouside the pan that way you keep better control of cook time. Thanks for the cream or half and half tip, I didn't know that one, I'll try it. Your right, it's scrambled eggs, for some people it's known as an omelette, that is why I added it.
