I'm no master chef. But I do enjoy cooking from time to time. Especially since I've joined Weight Watchers (my mom is jumping for joy, lol). This one is easy after you get through peeling and fighting with butternut squash. You can also buy it peeled and cubed btw.

This recipe is found in the "Hungry Girl" cook book. NOT on the website. But for more recipes by hungry girl go to hungry-girl.com. (i ADORE hungry girl btw)

"yummy butternut home fries"

Ingredients:

2 cups peeled and cubed butternut squash
1/2 medium red bell pepper, chopped
1/2 medium onion, chopped
1/2 cup fat free broth (chicken or vegetable)
1/2 tbsp olive oil
1/4 tsp pumpkin pie spice
dash of cayenne pepper
salt and black pepper to taste

Cook time is about 15-20 minutes.

1 serving: 58 calories, 2g fat, 2g fiber = 1 point

  • This looks very tasty. I can't wait to make it at home. I have to ask you is there a preference in the cooking pan? It looks like your using a stainless steel pan. I have a nonstick pan at home. Does it matter which pan is used?

  • get some corn beef thinly sliced and dip it in some mustard and u gon be good...
