It isn't the acid in the peppers that burns ;) It is a chemical called caspasin. It is lipid soluble so milk can wash it down whereas water can't.

@moletrap from what i remember from chemistry - acids neutralize alkali (bases) and the other way around , milk however neutralizes both

Why not, it goes perfect with the newest fat diet.
Young people should eat animal fat (solid one).
Older people can't do it so they drink sunflower oil (plain vegetable oil is no good because it has too much trans-fat acids)
Just kidding, of course I would rather have the burning than drink oil!;D
