How to make a serious hot sauce (pepper sauce in the Caribbean) with some of the most extreme peppers in the world - scotch bonnet or habanero.     Abeba82 since we used vinegar it keeps in the fridge for months (but will loose some of it's heat). On the counter it can stay for a month or 2 but you'll find that the top will go a bit darker, so you'll have to stir regular.

    @HolidayMell - Yes, the traditional way pf adding flavour and helping to preserve in the Caribbean, is to place the bottles with the sauce in the sun for a few days.

  • This looks fantastic. I am curious, did you include the rhind or outer layer of the lemons when you blended everything? or did you just use the lemon juice? I was told that lemon rhind is bitter.
