March 16, 2010. This traditional countryside meal was prepared for my benefit and consisted of two 1.5kg freshly caught mudfish. The first dish was mudfish with lemongrass, pot roasted in palm oil and lemongrass over a wood fire served with a garlic chili lime-based dipping sauce and the second dish was stirfry of boneless chunks of mudfish with homegrown peppers and spices. All served with freshly boiled rice that was harvested the week before in the field near this house. Location approx 50km south south-west of Phnom Penh in Kandal Province, Cambodia.
