Great video! I love seeing how recipes translate depending on regional ingredients. Here's a tip: to avoid surface cracks on the cake, add the eggs last when you're mixing the topping and then mix it as little as possible (while still combining everything). Eggs cause air bubbles, which can cause cracks. You can also bake it in a water bath to keep the top from drying -- wrap the outside of the pan in aluminum foil and place the pan in a larger pan that contains about an inch (2.5 cm) of water.
