Yes they are very good, like any game animal the way you handle the carcass and prepare the meat is very important. Waterbuck have glands on their skin in the hair folicals that lets out a musky smell oil to protect them when they are feeding in water. If you skin them you need 2 people, 1 to hold the outside of the skin away from the meat and the other 1 to do the actual skinning. If the skin don't touch the meat there are actually nithing wrong with the meat.
To shoot a Waterbuck over 30" are very rare and to get one of almost 32" is exceptional. Well done Shane for bagging this monster of a Waterbuck!! Andre Nortje
