Hi guys!

Another cooking with Jess video ALREADY? I do hope you're not sick of me already:) I'm trying to space everything out so that you get videos on a regular basis...let's see if I can keep this going shall we?

Protein Pancakes

Ingredients:
1/2 cup cottage cheese (or greek yogurt)
1/2 cup oats
1/2 cup egg whites (or 2 eggs)
1 tsp of maple extract (or vanilla extract)
1/4 tsp baking powder
2 packets of stevia
Non stick spray

Directions:
1. Place all ingredients in blender
2. Spray your pan with non stick spray and turn your stove top to medium-high or medium-low
3. Cook your pancakes as you normally would (flipping over once the top bubbles up
4. Dress your pancakes with whatever you want!

Serving size: ONE serving - makes about 4-5 small pancakes

You can get creative with this recipe, add 1/2 cup of blueberries to the mix OR add some peach slices, apple slices and cinnamon perhaps? The sky really is the limit!

  • Made them this morning after finding Chia Goodness at the Vegetarian Food Festival in Toronto. Apple Cinnamon flavor is great! Thanks for the reccomendation. Probably would not have tried it if you hadn't mentioned it. .

  • I have been wanting to try these pancakes for ages and I finally made them this morning! So good! I added mixed berries and used coconut oil instead of cooking spray. You were right btw, it does make a lot of pancakes! I only ate half and I am already really full! Thank you so much, can't wait to experiment more with the recipe! And btw Merry Xmas :)

  • just tried this, they are DELICIOUS but the mixture was quite runny so blended a whole banana in there too.. really nice though!
