  • Because the keg is smaller, you can't leave it aging very long. The liquid is closer to the wood and the beverage can start tasting like wood quickly. So, you age it about a year or a little less. The down-side of this is that is messes with the technicality of calling it Scotch, according to British Law - which has to be aged 8 years. On the taste side, there's no down side. Many consider this stuff from the little keg to taste better than any made on the large scale anywhere.
