Here's a demo of the preparation of a popular Jamaican dish "Stamp & Go" aka Jamaican Style Codfish Fritters. I was rushing here as I was on borrowed time from my parole officer (aka newborn baby). LOL! Please note that I meant baking POWDER, not soda. Also, when I first started cooking the batter, I'd portion it with a tablespoon, but then switched to a teaspoon because I thought they were getting too big. Ingredients used:

1/2 lb salted fish (in this case, cod fish)
3 cups flour (about 1lb or 500 gms or so)
1 tsp baking POWDER, not soda (optional)
1/2 tsp thyme
1 scotch bonnet seeded & finely chopped (I normally use 2)
1/2 of a small tomato, finely chopped
2 scallions, finely chopped (normally I use 3)

Saltfish can be soaked longer to remove more salt.

  • I make these all the time but the inside of the fritters are never cooked properly. Please help! Ive tried with the oil on low heat, medium heat, high heat etc. and Ive tried making the fritters tiny & bitesized, but it still doesnt help.
