MAy I know why my puff kept sticking to the grease paper? If i remove them, there will be a hole at the bottom. Can explain why? thx

hmm.. my grandpa is from sicily and he makes his family recipe.. and his is completely different.. his are big too.. and have air pockets so the cream is completely inside.

i got a question for ya... (about puff pastry)
1)how long it takes to make sure the mixture forms a ball at the top of it..?
2)did u break the egg after u remove the saucepan or u let the mixture cool first, then u add the egg?
thats all...hope u reply me immediately...thanks for the recipe
i tried tihs but my misture befor the eggs and after the eggs were goop

Maybe it has something to do with the air humidity or something. Or the heat of the pan.
