Why this happens: Look at the phase diagram of water. The pressure in a bottle of Coca-Cola is approximately 4atm, if the bottle is cooled just slightly below 0 Celcius it will remain in the liquid state, but a reduction in pressure will cause the equilibrium phase to change to solid state. Those familiar with chemistry know this to be just one of the odd properties of water, the video is not faked.
