What I've done is let this dough rest in the refrigerator for around 24 hours. After doing this, setting it out and shaping it, the crust came out exactly they way I wanted it - crispy on the bottom, and also chewy on the top and middle.

@TheNakedWombat It's still effectively a plain flour, but it's generally got a higher protein content in it and produces better results than cheap plain flour. It can be referred to as strong flour, baking flour, baker's flour or bread flour too. You can use plain flour if that's all you have available.
