why do you have to shock the vegetables before you grill them? that's kinda like waterboarding your food.

Actually I only grilled the pineapple. The other veggies i blanched to bring out the color and get them to al dente... This way you just warm them quickly in the sauce and they are done. I find that the look more presentable when blanched versus cooking through in the sauce... Sometime that'll discolor them badly.
