Ratatouille is not just a great movie, it's a fabulous French recipe made with abundant seasonal vegetables that grow in the Provence region which is near the Mediterranean Sea. Ratatoullie is a vegetable stew of sorts, thick, rustic and delicious.

  • i lvoe the way you say your herbs is from your garden =D

    anyway there are so many type of ratatouille, but i see yours as mashed where as the restaurant that i use to work still remains the shape of the vegetable. and we use onion too. is it another version of ratatouille? or My style is wrong?

  • no....go to Provence and you'll find many different types....as long as it fresh and tastes good.you've done it correctly!

  • wrong method. you should fry each vegetable individually to it's own taste. you dont want to over/undercook other vegetables in the dish. this guys dish just looks gross.

  • that's the great thing about America..we're free to share our opinions, even if they conflict with others..as in the case here with this comment...I will reserve my right to totally disagree with you however..

  • @blogleftbanker I agree, cooking is not like designing a nuclear power plant where a small change can result in a disaster. As long as it is fresh and tastes good, it is good food.

  • I got one question. Are you vegetrian?

  • My attempt ended with a lot of water. the veggies were nicely cooked but the amount of water I thought made everything a little worse than it needed to be. Should I have salted? I tried to reduce but this was not possible as the veggies were already done as i finished.

  • This is totally wrong - you need to use the salt to remove the bitterness. remove the skin too, it is too hard, and look at all the seeds in your eggplant, this is terrible,

    I'm with Keith on this issue. The kitchen is no place for Stalin-esque rigidity. Loosen up, folks. He said at the beginning that this is HIS version so don't compare him to your imaginary French grandmother (who probably couldn't cook her way out of a well-lit kitchen). Vive la diffénce!
